The Rich Landscape of Colombian Coffee
Colombia is a land of breathtaking diversity—geographically, culturally, and linguistically. With over 68 ethnic languages spoken alongside Spanish and even English in some regions, Colombia’s rich heritage is as varied as its landscapes, which stretch from the lush Amazon rainforest to the soaring highlands of the Andes mountains. Once the world’s largest producer of washed coffees, Colombia is divided by the Andes into three major coffee-growing regions, offering fresh harvests all year round. As seasons shift, so do the varietals and the farmers who grow them, but the commitment to quality remains constant thanks to rigorous work by local mills and quality control labs.
From Farm to Mill: The Art of Colombian Coffee Processing
When the coffee cherries reach peak ripeness, they are carefully hand-picked and sorted through a flotation process that removes underripe beans, sticks, and debris. The cherries are then pulped and sent through washing channels to fermentation tanks, where they rest for 8-14 hours to develop their flavor. Following fermentation, the beans are dried either on patios or in guardiolas until they reach the ideal moisture level of 10-12%. Most of this meticulous processing happens on the farms before the beans are sent to a dry mill for grading, tasting, and blending. Stored in parchment until export, the coffee is then hulled and bagged, with beans sized 15-16 earning the Excelso grade—signifying high quality.
A Chemical-Free Decaffeination Process
After being carefully processed in Colombia, the beans are shipped to Swiss Water Decaf in Vancouver, Canada, where they undergo a revolutionary, chemical-free decaffeination process. Using pure water and a proprietary Green Coffee Extract (GCE), Swiss Water® gently removes caffeine while preserving the beans’ natural flavors. The beans are soaked in fresh water, allowing caffeine to migrate out of the coffee into the GCE until equilibrium is reached. This mixture then passes through carbon filters that capture and remove the caffeine, leaving the extract refreshed and ready to decaffeinate more coffee.
